Ingredients (7)
- 4 zucchini, thinly sliced, lengthways
- 1 tbsp Coles pure olive oil
- 6 cloves garlic, unpeeled
- 1/4 cup Coles extra virgin olive oil
- 1 tbsp Coles Italian white wine vinegar
- 200g baby spinach leaves
- 1 1/2 cups Coles frozen peas, blanched
Method
- Step 1 Preheat oven to 180C or 160C fan-forced. Place zucchini and olive oil on a baking tray and toss to combine. Scatter garlic around zucchini on tray. Bake for 10-15 mins, or until zucchini is tender.
- Step 2 Squeeze garlic from skin and place in a small bowl with extra virgin olive oil and vinegar. Season and whisk until well-combined.
- Step 3 Place spinach, peas and zucchini in a large bowl. Add garlic dressing and toss to combine.
